Fermentation:
The grapes were left in pre-fermentative maceration for 2 days and once the alcoholic fermentation was completed, there was a post-fermentative maceration of about a month. Once the wine was drawn off, it remained on the fine lees with continuous batonnage until June, after which it was put on the clean lees and bottled in August 2019 and has remained in the glass until today.
Fermentation and aging in concrete vats of 25hl, at increasingly longer intervals, in the descending moon day of flowers, I carry out a remuage for each individual bottle.
After the destemming, grapes ferment in small tanks with selected yeast under uncontrolled temperature. During maceration, which lasts 10-12 days, daily breaking up of the marc are carried out by manual punching down. After the racking, malolactic fermentation is carried out 700 liter oak tonneaux with indigenous lactic bacteria.

My name is Nicolò Grippaldi, I am 35 years old and I am a small biodynamic wine grower from Gagliano Castelferrato, a small village 651 metres above sea level in the province of Enna, Sicily.
My dream began in Florence when I attended the Faculty of Literature and Philosophy. In those years I heard the word biodynamics for the first time from my dear friends, the owners of Castello dei Rampolla, and from there destiny changed my life. After graduating I decided to return to Sicily and on my great-grandfather's abandoned land in 2015 I planted about 11,000 vine shoots, 7,000 of which are productive because I am grafting the remaining ones slowly otherwise I cannot manage them alone and because I am grafting a massal selection by taking the scions from 4 ancient pergolas of my great-grandfather's Nero d'Avola and Nerello Mascalese to multiply them. The sixth of planting is 2.70m x 0.90 m guyot espalier.Half vineyard Nerello Mascalese, other half Nero d'AvolaThe altitude ranges from 650 to 700 m above sea level, south exposure, orientation of rows south / south-east, NO IRRIGATION.The average production for each vine is about 1.
